Clayton  - HEAD CHEF


Clay has been cooking for 45 years. It all began in the early 70's at the Narrabeen Boatshed Restaurant as kitchenhand/entree boy. Since then he has worked with some of the greats of the Sydney food scene including Peter Doyle of Est. and Mark Armstrong of Pegrums. For the last 6 years he has been running Rocksalt Italian with the help of his wonderful wife, Carol.



Along with Clay, Carol has been at the front of house at Rocksalt Italian from the start.  Always ready with a smile and a familiar face to our many regulars, Carol makes your evening every bit as special as it should be.


The whole is only as good as the sum of its parts. Sunny & Anish are testaments to that statement. Along with the kitchenhands, these boys keep the kitchen going through thick and thin.
